1 pkg. (6 oz.) Butter Bliss
1 beet thinly sliced
1/4  fennel bulb, thinly sliced
4 Asparagus Spears, cut in half lengthwise
4 baby carrots, peeled and halved lengthwise
4 Brussels Sprouts, thinly sliced
1 yellow squash, thinly sliced
1 red pepper, cored, seeded and thinly sliced
1 cup cooked mung beans or canned adzuki beans, drained
Grapefruit Dressing (recipe below)


COMPOSE salad on four medium plates, beginning with the greens and then arranging the vegetables and mung beans on top.
DRIZZLE Grapefruit Dressing over the top of the salad and serve immediately.
